Yummy Eats: Valentine's Day Treats

I love Valentine's Day. I do. I know a lot of people dread it and others call it a "Hallmark Holiday" designed by the diabolical greeting card company to further part us with our meager earnings. But not me! I know that in a lot of ways I fall on the cynical side of life, but there's something I adore about a day to celebrate love in our lives. Now I know that not everyone has a romantic love, but I learned a long time ago that you don't need romance to have a great Valentine's Day. I enjoy reminding my husband that I love him as much as telling my friends and family how much they mean to me.

In the spirit of this great day, I decided to take on an ambitious project and broadcast on Monday that I would be bringing in treats for my co-workers. I trolled Pintrest for a while and finally found the perfect recipe to try - Raspberry Swirl Cheesecake Cupcakes. They were delicious! I was quite proud of being able to make something the first time and actually enjoying the outcome. I was a tad nervous bringing them into the office since I hadn't had time to try them first (I made them the evening before and then chilled them overnight. I love sweets, but trying a cupcake at 6am isn't my style), but I was so tickled that every co-worker took time to thank me and tell me how much they enjoyed them. I was so happy to be able to wish all of them a Happy Valentine's Day.
